Ingredients

  • 3 lb. fresh spinach
  • 3 Tbsp. green pepper, minced
  • 1 Tbsp. canned pimentos, diced
  • 3 Tbsp. onion, minced
  • 6 Tbsp. oil
  • 1 1/4 tsp. salt
  • 2 Tbsp. lemon juice

Instructions

  1. Clean spinach thoroughly and drain well.
  2. In a large saucepan, combine green pepper, pimentos, and onion with oil.
  3. Saute for 3 to 5 minutes.
  4. Add spinach and salt.
  5. Cook, covered, until spinach is crispy-tender, about 10 minutes.
  6. Add lemon juice and serve.
