Ingredients

  • 1 lb. scallops
  • 1/2 tsp. minced onion
  • 1 c. water
  • 1/4 tsp. paprika
  • 1/4 tsp. oregano
  • 1 c. milk
  • 1 slightly beaten egg
  • 1 pkg. linguini
  • 2 tsp. Parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Blend scallops, minced onion, salt, pepper, and water in a saucepan. Cover and simmer for 10 minutes.
  2. Drain the scallops and save 1 cup of the liquid.
  3. Melt butter in a saucepan; blend in flour, paprika, and oregano.
  4. Add the reserved liquid and milk; cook until thick and bubbly.
  5. Stir a small amount of the mixture into the beaten egg, then add the egg mixture back into the sauce.
  6. Add the cooked scallops to the sauce and serve over linguini topped with Parmesan cheese.
