Ingredients

  • 1 pint canned corn
  • 6 oz evaporated milk
  • 2 beaten eggs
  • 2 Tbsp chopped onion
  • a dash of pepper
  • 1 cup shredded process Swiss cheese
  • 1 cup soft bread crumbs
  • 2 Tbsp butter

Instructions

  1. Boil the canned corn uncovered for 20 minutes, then drain well.
  2. Combine the drained corn, evaporated milk, beaten eggs, chopped onion, pepper, and 3/4 cup shredded Swiss cheese in a mixing bowl.
  3. Pour the mixture into a 10 x 6 x 1 1/2-inch baking dish or 1-quart casserole.
  4. Toss the bread crumbs with melted butter and the remaining cheese.
  5. Sprinkle the bread crumb mixture over the corn mixture.
  6. Bake at 350°F (175°C) for 25 to 30 minutes until golden and bubbly.
  7. Garnish with green peppers if desired before serving.
