Ingredients

  • 2 Tbsp. butter or margarine
  • 2 Tbsp. chopped celery
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped green pepper
  • 1/2 c. milk
  • 1/2 c. light cream
  • 1/2 tsp. ground sage
  • 1 (10 3/4 oz.) can condensed cream of potato soup
  • 1 can (about 8 oz.) cream-style corn
  • shredded Swiss cheese

Instructions

  1. In a 2-quart saucepan, over medium heat, melt the butter.
  2. Cook chopped celery, onion, and green pepper with ground sage until tender.
  3. Stir in the condensed cream of potato soup.
  4. Transfer the soup mixture to a blender or food processor and blend until smooth.
  5. Return the blended mixture to the saucepan.
  6. Add the cream-style corn to the mixture.
  7. Gradually stir in the milk and light cream.
  8. Heat thoroughly, stirring occasionally.
  9. Ladle into bowls and garnish with shredded Swiss cheese before serving.
