Ingredients

  • 1 lb. unsalted butter, softened
  • 1 tsp. Worcestershire sauce
  • 4 tsp. granulated sugar
  • 1/2 tsp. oregano
  • 1 1/2 tsp. tarragon
  • 1/2 tsp. black pepper
  • 3 oz. white wine
  • 1 tsp. salt
  • 1 tsp. dry mustard
  • 1 tsp. dried onions
  • 1 1/2 tsp. fresh parsley, chopped
  • 1 Tbsp. Grey Poupon mustard

Instructions

  1. Mix all ingredients into softened butter.
  2. Do not heat butter to blend in ingredients.
  3. Refrigerate until ready to use.
  4. Scampi butter not used in cheese sauce can be used to prepare shrimp, scallops, sirloin steak or chicken.
