Scottish Eggs Supreme features tender sausage encasing perfectly cooked hard-boiled eggs, coated in crispy breadcrumbs and seasoned with fennel, sage, and spices for a flavorful bite.

Ingredients

  • 1 lb ground pork
  • 3 Tbsp fennel seed
  • 1/4 tsp crushed red pepper
  • 1 1/4 tsp white pepper
  • 8 hard-boiled eggs
  • 3 beaten eggs
  • 2 tsp salt
  • 3 Tbsp fresh sage chopped
  • 2 c bread crumbs
  • Optional: horseradish mustard sauce for serving
  • 2 c. bread crumbs

Instructions

  1. Mix together the ground pork, fennel seed, cayenne, red pepper, sage, salt and white pepper.
  2. Divide the mixture into 8 equal balls.
  3. Form a small patty in your hand with each ball.
  4. Place a hard-boiled egg in the center of each patty and mold the meat around the egg to form a thin layer.
  5. Chill the sausage-coated eggs for a minimum of 20 minutes.
  6. Place the beaten eggs and bread crumbs in separate bowls.
  7. Dip each chilled sausage-coated egg into the beaten eggs, then coat thoroughly with bread crumbs.
  8. Dip again into the beaten eggs, then back into the bread crumbs for an extra coating.
  9. Chill the coated eggs for at least 15 minutes before cooking or serving.
