Scottish Eggs Supreme features tender sausage encasing perfectly cooked hard-boiled eggs, coated in crispy breadcrumbs and seasoned with fennel, sage, and spices for a flavorful bite.

- Mix together the ground pork, fennel seed, cayenne, red pepper, sage, salt and white pepper.
- Divide the mixture into 8 equal balls.
- Form a small patty in your hand with each ball.
- Place a hard-boiled egg in the center of each patty and mold the meat around the egg to form a thin layer.
- Chill the sausage-coated eggs for a minimum of 20 minutes.
- Place the beaten eggs and bread crumbs in separate bowls.
- Dip each chilled sausage-coated egg into the beaten eggs, then coat thoroughly with bread crumbs.
- Dip again into the beaten eggs, then back into the bread crumbs for an extra coating.
- Chill the coated eggs for at least 15 minutes before cooking or serving.
