Instructions

  1. Combine wafer crumbs, melted butter, and sugar in a small bowl.
  2. Press the mixture into the bottom of a greased 9 x 3-inch spring-form pan.
  3. Refrigerate the crust.
  4. Beat together all 5 packages of cream cheese, 1 3/4 cups sugar, flour, and vanilla in a large bowl until smooth and fluffy.
  5. Beat in eggs and egg yolks, one at a time, beating well after each addition until smooth.
  6. Stir heavy cream into the cheese mixture.
  7. Pour the filling into the prepared crust.
  8. Place the pan on a cookie sheet.
  9. Bake in a preheated oven at 475°F (246°C) for 10 minutes.
  10. Lower the oven temperature to 250°F (121°C) and bake for 1 hour.
  11. Turn off the oven and leave the cheesecake in for 1 hour.
  12. Open the oven door partway and leave the cheesecake in for an additional 30 minutes.
  13. Cool the cheesecake on a wire rack to room temperature.
  14. Refrigerate overnight before serving.
