Ingredients

  • 1/2 pound pork sausage
  • 12 eggs
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup shredded cheddar cheese

Instructions

  1. In a skillet, brown the sausage and drain.
  2. In a bowl, beat the eggs.
  3. Add chopped onion, chopped green pepper, salt, pepper, and garlic powder to the eggs and mix well.
  4. Stir in the cooked sausage and shredded cheddar cheese.
  5. Spoon approximately 1/3 cupfuls of the mixture into greased muffin cups.
  6. Bake at 350°F (175°C) for 20 to 30 minutes or until a knife inserted near the center comes out clean.
