Ingredients

  • 2 lb. frozen hash brown potatoes
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1/2 cup grated Cheddar cheese
  • 3/4 stick margarine
  • 1 cup crushed corn flakes
  • 1/2 teaspoon salt
  • pepper

Instructions

  1. Saute onions in 1/4 stick margarine; add cream of mushroom soup, sour cream, and grated Cheddar cheese until cheese is melted.
  2. Break up frozen hash brown potatoes into small pieces; place in a greased 9 x 13-inch casserole dish.
  3. Sprinkle with salt and pepper.
  4. Pour the cheese and soup mixture over the potatoes.
  5. Melt 1/2 stick of margarine (oleo); add 1 cup crushed corn flakes to this and spread over the casserole.
  6. Bake at 350°F (175°C) for 45 minutes to 1 hour until bubbly and golden.
