Ingredients

  • 4 or 5 medium zucchini, sliced 1/4-inch thick
  • 3 medium carrots, shredded
  • 1 medium onion, chopped
  • 1 can cream of chicken soup
  • 2 Tbsp butter
  • 1 cup sour cream
  • 1 cup seasoned bread crumbs

Instructions

  1. Boil zucchini until tender.
  2. Saute carrots and onion in butter until limp.
  3. Mix cream of chicken soup and sour cream.
  4. Add cooked vegetables to the soup mixture.
  5. Pour the mixture into a greased casserole dish.
  6. Combine bread crumbs with 1 tablespoon of melted butter until coated.
  7. Sprinkle bread crumb mixture on top of the casserole.
  8. Bake at 350°F for 30 minutes.
