  3. In the remaining butter in the pan, add tomato paste, tarragon, salt, pepper, and Madeira wine.
  4. Bring to a boil and cook until the wine reduces to about half a cup, approximately 10 minutes.
  5. In a separate bowl, beat the egg yolks to blend and then stir in the heavy cream.
  6. Gradually add this mixture to the wine mixture, stirring constantly over low heat until thickened.
  7. Add cooked shrimp or scallops, sautéed mushrooms and onions, and sliced water chestnuts to the sauce.
  8. Heat through and toss with freshly cooked linguini.
  9. Serve hot.
