Seaside Shrimp Casserole

Ingredients

  • 1 lb. fish (such as cod or sole)
  • 1 Tbsp. butter or margarine
  • 1 medium onion, thinly sliced
  • 2 cloves garlic or equivalent garlic powder
  • salt and pepper to taste
  • lemon juice to taste
  • 1 c. sour cream
  • 1 Tbsp. Dijon-style mustard
  • 1 1/2 c. cooked shrimp, shelled and deveined
  • dill or parsley, chopped

Instructions

  1. Clean fish and wipe off excess water.
  2. Cut fish into serving pieces or cubes; set aside.
  3. Saute onion in butter until soft but not browned.
  4. Add garlic and fish to onions; heat to simmer.
  5. Cook for 10 to 20 minutes until fish is just tender and flakes easily. Do not overcook.
  6. Add salt and pepper to taste.
  7. Sprinkle with lemon juice and set aside.
  8. Mix sour cream and Dijon-style mustard in a bowl.
  9. Add cooked shrimp and chopped dill or parsley to the mixture.
  10. Combine the fish with the shrimp mixture and serve.
