Secret Vegetable Casserole

A creamy vegetable casserole with cheesy topping and crunchy Ritz crackers, perfect as a comforting side dish for family dinners or holiday gatherings.

Ingredients

  • 1 pkg. frozen Italian vegetables
  • 1 c. grated sharp Cheddar cheese
  • 1 c. diced celery
  • 1 medium onion, chopped
  • 1 small can sliced water chestnuts
  • 2/3 c. mayonnaise
  • 1 stick margarine, melted
  • 1 tube Ritz crackers

Instructions

  1. Cook celery and chopped onion in melted margarine until tender.
  2. Cook frozen Italian vegetables according to package directions.
  3. Drain vegetables well and mix with cooked celery, onion, sliced water chestnuts, grated Cheddar cheese, and mayonnaise.
  4. Put the mixture into a buttered casserole dish.
  5. Crumble Ritz crackers and mix with remaining melted margarine, then sprinkle over the casserole.
  6. Bake at 325°F for 30 minutes or until hot and bubbly and cheese has melted.
