- Cook celery and chopped onion in melted margarine until tender.
- Cook frozen Italian vegetables according to package directions.
- Drain vegetables well and mix with cooked celery, onion, sliced water chestnuts, grated Cheddar cheese, and mayonnaise.
- Put the mixture into a buttered casserole dish.
- Crumble Ritz crackers and mix with remaining melted margarine, then sprinkle over the casserole.
- Bake at 325°F for 30 minutes or until hot and bubbly and cheese has melted.
