Ingredients

  • 8 (4 oz.) flounder fillets
  • vegetable cooking spray
  • 1 tsp. lemon juice
  • 1/4 tsp. pepper
  • 1/2 cup diced onion
  • 1/2 cup diced green pepper
  • 1/2 cup diced celery
  • 1/4 cup frozen apple juice concentrate, thawed
  • 2 tsp. toasted sesame seeds

Instructions

  1. Place the fillets in a 13 x 9 x 2-inch baking dish coated with cooking spray.
  2. Drizzle the fillets with lemon juice and sprinkle with pepper.
  3. Sauté the onion, green pepper, and celery in thawed apple juice concentrate until crisp-tender.
  4. Spoon the sautéed vegetables over the fillets.
  5. Sprinkle with toasted sesame seeds.
  6. Bake at 350°F (175°C) for 20 to 25 minutes or until the fish flakes easily with a fork.
