Ingredients

  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 1 tablespoon cinnamon
  • 1/2 teaspoon ground ginger
  • 4 eggs
  • 2 tablespoons vanilla
  • 1 teaspoon salt
  • 3 cups grated carrots
  • 2 cups flour
  • 1 cup walnuts or pecans (optional)
  • 8 ounces cream cheese
  • 1 1/2 sticks butter
  • 2 cups powdered sugar

Instructions

  1. Combine sugar, vegetable oil, cinnamon, ground ginger, eggs, vanilla, salt, grated carrots, and flour in a bowl and beat until well mixed.
  2. Stir in the walnuts or pecans if using.
  3. Pour the batter into a greased and floured 12 x 7 1/2-inch baking pan.
  4. Bake at 350°F (175°C) for 30 minutes.
  5. Test with a toothpick to ensure the cake is cooked through; the toothpick should come out clean.
