- Cook shells according to package directions.
- Drain shells and toss with 2 1/2 cups spaghetti sauce.
- In a medium bowl, combine ricotta or cottage cheese, chopped spinach, Parmesan cheese, eggs, salt, and pepper.
- In a 2 1/2-quart casserole, layer half of the shell mixture.
- Spread the cheese filling over the shells.
- Cover with the remaining shells.
- Top with the remaining 1 cup of spaghetti sauce.
