Ingredients

  • 3 cups medium shells, uncooked
  • 3 1/2 cups spaghetti sauce
  • 2 cups Ricotta or cottage cheese
  • 1 cup chopped fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook shells according to package directions.
  2. Drain shells and toss with 2 1/2 cups spaghetti sauce.
  3. In a medium bowl, combine ricotta or cottage cheese, chopped spinach, Parmesan cheese, eggs, salt, and pepper.
  4. In a 2 1/2-quart casserole, layer half of the shell mixture.
  5. Spread the cheese filling over the shells.
  6. Cover with the remaining shells.
  7. Top with the remaining 1 cup of spaghetti sauce.
  8. Sprinkle with additional Parmesan cheese.
  9. Cover and bake at 350°F for 35 to 40 minutes or until hot and bubbly.
