Colorful and flavorful shish-k-bobs feature tenderized steak and fresh vegetables, grilled or baked, perfect for family dinners and outdoor gatherings with smoky, savory notes.

Ingredients

  • 1 round steak
  • fresh squash
  • new potatoes
  • bell pepper
  • large onion
  • whole okra
  • 14 1/2 oz canned tomatoes
  • 4 oz bottle liquid smoke
  • butter
  • salt

Instructions

  1. Tenderize meat by pounding with the edge of a saucer or using a prepared tenderizer such as Lawry's.
  2. Scrub vegetables and slice into about 1/4-inch slices.
  3. Leave okra whole.
  4. Alternate meat cubes with vegetables on bamboo skewers.
  5. Place skewers into two greased 8 x 11-inch baking dishes.
  6. Three skewers will fit into each dish.
  7. Dot the skewers with butter.
  8. Season with salt and pepper to taste.
  9. Pour 1/2 can of tomatoes into each dish.
  10. Place 1/2 bottle of liquid smoke over each dish.
  11. Cover with foil and bake at 350°F for 1 hour.
  12. This dish can be prepared ahead and baked later in the day.
  13. Serve with salad and bread for a complete meal.
