- Tenderize meat by pounding with the edge of a saucer or using a prepared tenderizer such as Lawry's.
- Scrub vegetables and slice into about 1/4-inch slices.
- Leave okra whole.
- Alternate meat cubes with vegetables on bamboo skewers.
- Place skewers into two greased 8 x 11-inch baking dishes.
- Three skewers will fit into each dish.
- Dot the skewers with butter.
- Season with salt and pepper to taste.
- Pour 1/2 can of tomatoes into each dish.
- Place 1/2 bottle of liquid smoke over each dish.
- Cover with foil and bake at 350°F for 1 hour.
- This dish can be prepared ahead and baked later in the day.
- Serve with salad and bread for a complete meal.
