Ingredients

  • 3 to 4 lb. chuck roast
  • 2 Tbsp. vegetable oil
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • 2 medium onions
  • 1 Tbsp. vegetable oil
  • 1 (15 oz.) can tomatoes
  • 2 (4 oz.) cans green chilies
  • 1 tsp. cumin
  • 2 tsp. leaf oregano

Instructions

  1. Brown chuck roast in oil in a large saucepan or Dutch oven.
  2. Add 1 cup water, cumin, and garlic powder.
  3. Simmer until the meat is tender enough to pull apart, about 1 1/2 to 2 hours.
  4. Let cool until cool enough to handle.
  5. Remove and discard fat, bones, and gristle using hands.
  6. Shred the remaining lean meat.
