Shrimp And Broccoli
A vibrant shrimp and broccoli stir-fry bursting with fresh vegetables, tender shrimp, and savory soy sauce, perfect for quick, flavorful weeknight dinners or entertaining guests.
Ingredients
- 1 lb. fresh shrimp, peeled and deveined ⓘ
- 3 Tbsp. cooking oil ⓘ
- 4 green onions, chopped ⓘ
- 1 medium red bell pepper, cut in thin 2-inch strips
- 1 (8 oz.) can water chestnuts, drained ⓘ
- 6 medium mushrooms, sliced ⓘ
- 1 1/2 c. broccoli flowerets ⓘ
- 2 Tbsp. white wine
- 1 tsp. sugar ⓘ
- 2 Tbsp. soy sauce ⓘ
- 2 egg whites, beaten ⓘ
- 1 1/2 c. cooked rice ⓘ
Instructions
- Preheat wok at medium-high heat for 1 minute.
- Pour oil around the top of the wok to coat all sides.
- Add chopped green onions and stir-fry for 2 minutes.
- Add red bell pepper, drained water chestnuts, and sliced mushrooms; stir-fry for 2 minutes.
- Add broccoli florets, shrimp, white wine, sugar, and soy sauce.
- Stir-fry for 3 minutes or until shrimp turn pink.
- Push the shrimp mixture up the sides of the wok to form a well in the center.
- Pour beaten egg whites into the well and stir-fry until the egg is set.
- Stir the shrimp mixture into the cooked egg whites.
- Add cooked rice and stir-fry for 2 minutes.
- Serve immediately.
