Ingredients

  • 1 lb. fresh shrimp, peeled and deveined
  • 3 Tbsp. cooking oil
  • 4 green onions, chopped
  • 1 medium red bell pepper, cut in thin 2-inch strips
  • 1 (8 oz.) can water chestnuts, drained
  • 6 medium mushrooms, sliced
  • 1 1/2 c. broccoli flowerets
  • 2 Tbsp. white wine
  • 1 tsp. sugar
  • 2 Tbsp. soy sauce
  • 2 egg whites, beaten
  • 1 1/2 c. cooked rice

Instructions

  1. Preheat wok at medium-high heat for 1 minute.
  2. Pour oil around the top of the wok to coat all sides.
  3. Add chopped green onions and stir-fry for 2 minutes.
  4. Add red bell pepper, drained water chestnuts, and sliced mushrooms; stir-fry for 2 minutes.
  5. Add broccoli florets, shrimp, white wine, sugar, and soy sauce.
  6. Stir-fry for 3 minutes or until shrimp turn pink.
  7. Push the shrimp mixture up the sides of the wok to form a well in the center.
  8. Pour beaten egg whites into the well and stir-fry until the egg is set.
  9. Stir the shrimp mixture into the cooked egg whites.
  10. Add cooked rice and stir-fry for 2 minutes.
  11. Serve immediately.
