Shrimp In Wine

Ingredients

  • 1 lb. large shrimp, butterflied, with tail shell on
  • 1/2 c. flour
  • 1/2 c. freshly grated Parmesan cheese
  • 1/4 c. garlic powder
  • olive oil
  • 1 c. cooking sherry
  • 1 c. cooking Marsala wine
  • 1/4 c. coarsely chopped scallions

Instructions

  1. Combine flour, Parmesan cheese, and garlic powder in a large bowl.
  2. Moisten the shrimp with water and dredge in the flour mixture.
  3. Heat a large skillet and pour approximately 1/8-inch of olive oil into the pan.
  4. Brown the shrimp lightly in the oil, but do not cook them through.
  5. Remove the shrimp from the pan.
  6. Drain excess oil from the pan, leaving flour and shrimp remnants.
  7. Deglaze the pan with cooking sherry and Marsala wine, heating until the mixture comes to a boil.
  8. Simmer the shrimp in the wine mixture for approximately 20 seconds, or until cooked.
  9. Garnish with coarsely chopped scallions before serving.
