Shrimp In Wine

- Combine flour, Parmesan cheese, and garlic powder in a large bowl.
- Moisten the shrimp with water and dredge in the flour mixture.
- Heat a large skillet and pour approximately 1/8-inch of olive oil into the pan.
- Brown the shrimp lightly in the oil, but do not cook them through.
- Remove the shrimp from the pan.
- Drain excess oil from the pan, leaving flour and shrimp remnants.
- Deglaze the pan with cooking sherry and Marsala wine, heating until the mixture comes to a boil.
- Simmer the shrimp in the wine mixture for approximately 20 seconds, or until cooked.
- Garnish with coarsely chopped scallions before serving.
