Ingredients

  • 1 to 2 lb. raw shrimp
  • 1 medium onion, chopped
  • 1 can diced Ro-Tel tomatoes
  • salt to taste
  • pepper to taste
  • 4 green onions, chopped
  • 4 stalks celery, chopped

Instructions

  1. Peel and devein the shrimp.
  2. Melt butter in a heavy skillet.
  3. Saute chopped onions and celery until tender.
  4. Add diced Ro-Tel tomatoes, shrimp, salt, and pepper.
  5. Simmer for 30 minutes.
  6. Serve over hot rice.
