- Melt butter in a saucepan and sauté chopped onion for 5 minutes.
- Stir in flour, then gradually whisk in milk, cooking over low heat until thickened, stirring constantly.
- Remove from heat and beat in salt, pepper, and egg yolks.
- Stir in salmon and fresh bread crumbs.
- Chill the mixture.
- Shape the mixture into 2‑inch nuggets, roll each in flour, dip in egg mixture, and coat with dry bread crumbs.
- Fry the nuggets in hot deep fat (375°) for 4 to 5 minutes or until golden brown, then drain on paper towel.
- Serve piping hot with favorite cream sauce.
