Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/2 c. milk
  • 2 egg yolks
  • 1 c. fresh bread crumbs

  • 1 medium onion, chopped
  • 1 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Melt butter in a saucepan and sauté chopped onion for 5 minutes.
  2. Stir in flour, then gradually whisk in milk, cooking over low heat until thickened, stirring constantly.
  3. Remove from heat and beat in salt, pepper, and egg yolks.
  4. Stir in salmon and fresh bread crumbs.
  5. Chill the mixture.
  6. Shape the mixture into 2‑inch nuggets, roll each in flour, dip in egg mixture, and coat with dry bread crumbs.
  7. Fry the nuggets in hot deep fat (375°) for 4 to 5 minutes or until golden brown, then drain on paper towel.
  8. Serve piping hot with favorite cream sauce.
