Ingredients

  • 6.25 oz. quick-cooking long grain and wild rice mix
  • 1 3/4 cups water
  • 1/4 cup dry white wine
  • 16 oz. frozen cut broccoli spears
  • 2 carrots
  • 1 lemon (for juice and grated zest)
  • 1 lb. red snapper fillets
  • 1/4 cup chopped parsley

Instructions

  1. In a 10 or 12-inch skillet, combine the rice and seasoning packets from the rice mix, water, white wine, broccoli, shredded carrots, and half the lemon zest.
  2. Heat to boiling over high heat, stirring often; boil for 1 minute.
  3. Spread the mixture evenly in the skillet.
  4. Place the red snapper fillets in a single layer on top of the rice mixture.
  5. Sprinkle with the remaining lemon zest and half the lemon juice.
  6. Reduce heat to medium-low, cover, and simmer for 15 minutes or until the snapper flakes easily and the rice is tender.
  7. Sprinkle with the remaining lemon juice and chopped parsley before serving.
