Ingredients

  • 1 1/2 lb. large shrimp, shelled and deveined
  • 1 lb. sliced mushrooms
  • 2 garlic cloves, minced
  • 3 medium tomatoes, diced
  • 2 Tbsp. lemon juice
  • salt and pepper
  • 2 Tbsp. chopped parsley
  • 3 c. hot, cooked rice

Instructions

  1. In a 12-inch skillet over medium heat, heat 2 tablespoons of oil.
  2. Cook the shrimp, stirring often, for about 3 minutes until they turn pink; set aside.
  3. In the same skillet, add 1 tablespoon of oil.
  4. Add sliced mushrooms and cook until tender, about 3 minutes.
  5. Add diced tomatoes, lemon juice, salt, and pepper.
  6. Cook for an additional 3 minutes.
  7. Return the cooked shrimp to the skillet.
  8. Heat through.
  9. Sprinkle with chopped parsley.
  10. Serve with hot, cooked rice.
