- Combine the bread crumbs, 1/2 cup Parmesan cheese, and melted butter in a bowl and mix well.
- Press the mixture evenly over the bottom of 4 greased 7 x 11-inch baking pans.
- Layer the Swiss cheese, scallions, and cooked shrimp over the crumb mixture and pat firmly.
- Beat the eggs in a large bowl.
- Add the cornstarch and beat until blended.
- Add the milk and beat until well mixed.
- Add the grated nutmeg and cayenne pepper to taste.
- Pour the egg mixture over the layers in each pan.
- Sprinkle with the remaining 1/4 cup Parmesan cheese.
- Bake at 400°F for 15 minutes.
- Reduce the oven temperature to 350°F and bake for an additional 15 minutes.
- Cool for 20 minutes or longer.
- Cut each baked layer in each pan into 24 squares.
