Ingredients

  • 4 cups fine whole-grain bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup melted butter
  • 4 cups shredded Swiss cheese
  • 4 cups thinly sliced scallions
  • 6 cups small cooked shrimp
  • 24 eggs
  • 4 teaspoons cornstarch
  • 6 cups milk
  • grated nutmeg to taste
  • cayenne to taste

Instructions

  1. Combine the bread crumbs, 1/2 cup Parmesan cheese, and melted butter in a bowl and mix well.
  2. Press the mixture evenly over the bottom of 4 greased 7 x 11-inch baking pans.
  3. Layer the Swiss cheese, scallions, and cooked shrimp over the crumb mixture and pat firmly.
  4. Beat the eggs in a large bowl.
  5. Add the cornstarch and beat until blended.
  6. Add the milk and beat until well mixed.
  7. Add the grated nutmeg and cayenne pepper to taste.
  8. Pour the egg mixture over the layers in each pan.
  9. Sprinkle with the remaining 1/4 cup Parmesan cheese.
  10. Bake at 400°F for 15 minutes.
  11. Reduce the oven temperature to 350°F and bake for an additional 15 minutes.
  12. Cool for 20 minutes or longer.
  13. Cut each baked layer in each pan into 24 squares.
