Ingredients

  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. beef stock
  • salt
  • peppercorns
  • 1/2 tsp. chopped chives
  • 1/2 tsp. mustard
  • 1 Tbsp. horseradish
  • 1/4 c. cream
  • 1 tsp. lemon juice

Instructions

  1. Melt butter in a saucepan, add flour, blend well, and gradually pour in the beef stock while stirring.
  2. Stir in salt, peppercorns, chopped chives, mustard, and horseradish.
  3. Cook the mixture for 2 minutes, then strain the sauce.
  4. Add cream and lemon juice, bring to a boil, and serve.
