Ingredients

  • 1 stick margarine or butter
  • 1 cup sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 egg
  • 1 cup mashed bananas
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 1/2 tablespoons sour cream
  • 1/2 to 1 cup nuts

Instructions

  1. Cream butter and sugar together; then add the egg and blend well.
  2. Mix in mashed bananas and lemon juice.
  3. Sift together the dry ingredients: flour, baking powder, soda, and salt.
  4. Alternately add the dry mixture and sour cream to the banana mixture, mixing well after each addition.
  5. Fold in nuts if desired.
  6. Pour the batter into a well-greased 9 x 5-inch loaf pan.
  7. Bake at 350°F for approximately 50 minutes or until a tester inserted in the center comes out clean.
  8. Allow to cool before slicing.
