A quick and flavorful skillet dinner combining ham, pineapple, and rice with fresh parsley, perfect for a satisfying weeknight meal with sweet and savory notes.

Ingredients

  • 20 oz. can Dole pineapple tidbits
  • 2 cups ham strips
  • water
  • 6 1/4 oz. package long-grain and wild rice mix
  • 1 Tbsp. minced parsley

Instructions

  1. Drain pineapple; reserve syrup.
  2. In a large skillet, saute ham in butter until lightly browned.
  3. Add enough water to the pineapple syrup to make 2 cups liquid; add to the skillet.
  4. Stir in the contents of the rice mix.
  5. Bring to a boil.
  6. Cover and simmer for 5 to 10 minutes until the liquid is absorbed.
  7. Fold in the pineapple.
  8. Sprinkle with parsley and serve.
