Delight in these light, fluffy pineapple blintzes with a hint of honey, perfect for brunch or dessert, appealing with tropical flavors and wholesome whole wheat crust.

Ingredients

  • 1 1/2 cups nonfat vanilla yogurt
  • 1 cup well-drained crushed pineapple
  • 4 egg whites
  • 2 cups skim milk
  • 2 Tbsp honey
  • 1 1/2 cups whole wheat flour
  • 1/2 tsp baking powder

Instructions

  1. Spoon the yogurt into a sieve lined with cheesecloth.
  2. Place over a bowl and set aside to drain for 20 minutes.
  3. Mix the drained yogurt and well-drained crushed pineapple in a bowl; set aside.
  4. Place egg whites in a medium bowl and whisk until frothy.
  5. Wisk in the skim milk and honey.
  6. Add the whole wheat flour and baking powder; mix well.
  7. Spray a pan with Pam and allow it to get warm.
  8. Add about 1/4 cup of batter to the pan and tilt the pan in all directions to spread the batter thinly over the bottom.
  9. Cook for 1 minute or until brown, then turn and brown the other side.
  10. Place the cooked blintz on a wire rack to cool.
  11. Repeat until all the batter is used.
  12. To serve, divide the pineapple filling among the blintzes, spooning down the center of each.
  13. Fold in the sides before serving.
