Simply Great! Pineapple Blintzes
Delight in these light, fluffy pineapple blintzes with a hint of honey, perfect for brunch or dessert, appealing with tropical flavors and wholesome whole wheat crust.

Instructions
- Spoon the yogurt into a sieve lined with cheesecloth.
- Place over a bowl and set aside to drain for 20 minutes.
- Mix the drained yogurt and well-drained crushed pineapple in a bowl; set aside.
- Place egg whites in a medium bowl and whisk until frothy.
- Wisk in the skim milk and honey.
- Add the whole wheat flour and baking powder; mix well.
- Spray a pan with Pam and allow it to get warm.
- Add about 1/4 cup of batter to the pan and tilt the pan in all directions to spread the batter thinly over the bottom.
- Cook for 1 minute or until brown, then turn and brown the other side.
- Place the cooked blintz on a wire rack to cool.
- Repeat until all the batter is used.
- To serve, divide the pineapple filling among the blintzes, spooning down the center of each.
- Fold in the sides before serving.
