Sinker dumplings are hearty, tender potato-based treats perfect for pairing with roast pork, topped with flavorful pork drippings and browned onions for a comforting meal.

Ingredients

  • 2 cups grated raw potatoes
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 cup fine dry bread crumbs
  • 1 1/2 cups flour
  • salted water for boiling

Instructions

  1. Rinse grated raw potatoes in cold water and drain well.
  2. Combine the potatoes, eggs, salt, bread crumbs, and enough flour to make a stiff dough.
  3. Using a wet spoon, drop tablespoon-sized portions of the dough into boiling, salted water.
  4. Cook until the dumplings float to the top, about 2-3 minutes.
  5. Serve the dumplings with roast pork, topped with pork drippings and browned, chopped onions.
