Sister'S Pea Salad

A light, flavorful pea salad with crunchy pecans, water chestnuts, and a sweet-tangy dressing, perfect for picnics, potlucks, or as a refreshing side dish.

Ingredients

  • 34 oz. cans LeSueur English peas
  • 3/4 cup finely chopped pecans
  • 1 small onion, finely chopped
  • 1 cup finely diced water chestnuts
  • 1/2 cup diced pimiento, drained
  • 1/3 to 1/2 cup mayonnaise
  • 1/4 cup salad oil
  • 1/4 cup vinegar
  • 1/3 cup white sugar

Instructions

  1. Drain and rinse the water chestnuts very well. Cut them into small pieces.
  2. Marinate the chestnuts overnight or for at least 8 hours in a mixture of salad oil, vinegar, and sugar.
  3. Drain the marinated chestnuts very well.
  4. Drain the peas very well.
  5. In a large bowl, combine the peas, chopped pecans, finely chopped onion, diced water chestnuts, and drained pimiento if using.
  6. Add mayonnaise, salad oil, vinegar, and sugar to the mixture.
  7. Mix all ingredients thoroughly and chill before serving.
  8. Serve plain as a vegetable, on lettuce as a salad, or in tomato halves, shells, or slices.
