Ingredients

  • 1 lb ground beef
  • 2 large potatoes
  • 1 onion
  • 1/4 cup rice
  • 1 green pepper
  • 1 (10 oz) package green beans
  • 1 1/2 to 2 cans tomato soup

Instructions

  1. Crumble half of the ground beef in the bottom of an 11 x 3-inch pan and set aside the remaining half.
  2. If using raw rice (not Minute rice), bring water to a boil and soak the rice while preparing other ingredients.
  3. Layer sliced potatoes, chopped onion, chopped green pepper, green beans, and the crumbled ground beef in the pan in the given order, ending with the remaining half of the ground beef on top.
  4. Pour tomato soup over all the layered ingredients, thinning with a little water if desired.
  5. Cover the pan and bake at 325° to 350°F for 1 1/2 hours.
  6. Serves 6 to 8.
