Ingredients

  • 1/4 cup vinegar
  • 1 egg
  • 1/4 cup saltine cracker crumbs
  • 1 1/2 teaspoons salt
  • 1/4 cup brown sugar
  • 1 teaspoon mustard
  • 1 medium onion
  • 2 pounds ground beef
  • 1/4 teaspoon pepper

Instructions

  1. Combine tomato sauce, brown sugar, vinegar, and mustard in a small bowl. Set aside.
  2. In a mixing bowl, combine egg, minced onion, cracker crumbs, ground beef, salt, and pepper.
  3. Add half of the tomato mixture to the meat mixture and blend thoroughly.
  4. Shape the mixture into an oval loaf and place in a microwave-safe oblong dish.
  5. Make a depression in the top of the loaf.
  6. Pour the remaining tomato sauce over the top of the meat loaf.
  7. Cook uncovered in the microwave for 18 to 20 minutes or until the center is cooked.
  8. Cover the meat loaf and let it stand for about 10 minutes before serving.
