Ingredients

  • 1/4 c. butter
  • 1 c. brown sugar
  • 8 slices canned pineapple
  • 8 maraschino cherries
  • 3 eggs, beaten
  • 1/2 tsp. salt
  • 1 1/2 c. cake flour, sifted
  • 1 tsp. vanilla
  • 1 1/2 tsp. baking powder
  • 3/4 c. scalded milk
  • 2 Tbsp. butter

Instructions

  1. Melt 1/4 cup of butter in a skillet.
  2. Spread 1 cup of brown sugar evenly over the melted butter.
  3. Place 1 slice of pineapple in the center of the skillet and arrange the remaining slices around it.
  4. Place a maraschino cherry in the center of each pineapple slice.
  5. Cover with the batter made from the remaining ingredients.
