Ingredients

  • 2 Tbsp. corn oil
  • 2 medium zucchini (about 3/4 lb.), cut in 1/4-inch slices
  • 1 tsp. salt
  • 1/2 tsp. crushed dried basil leaves
  • 1 small onion, sliced
  • 2 medium summer squash (about 3/4 lb.), cut in 1/4-inch slices
  • 1 bay leaf
  • 1/4 tsp. pepper

Instructions

  1. Heat corn oil in a skillet over medium heat.
  2. Add the sliced onion; saute, stirring frequently until tender.
  3. Stir in the sliced zucchini, summer squash, salt, dried basil leaves, pepper, and bay leaf.
  4. Cover and simmer for about 20 minutes or until the vegetables are tender.
