Sky-High Stack-Ups are flavorful Mexican lasagna-style casseroles with seasoned beef, melted cheese, and crunchy tortillas, perfect for family dinners or casual gatherings with bold, comforting flavors.

Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 (8 oz) cans tomato sauce
  • 1/4 cup chopped green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 12 corn tortillas
  • 2 cups shredded Jack cheese

Instructions

  1. Cook and drain the ground beef and chopped onion in a fry pan.
  2. Stir in tomato sauce, chopped green chilies, chili powder, and salt; simmer for 10 minutes.
  3. In a 13 x 9-inch baking dish, place a layer of 6 tortillas.
  4. Spread half of the meat mixture over the tortillas.
  5. Sprinkle with 1 cup of shredded Jack cheese.
  6. Add another layer of 6 tortillas on top.
  7. Spread the remaining meat mixture over the tortillas.
  8. Top with the remaining cheese.
  9. Cover tightly with foil.
  10. Bake at 350°F for 30 minutes.
  11. Cut into squares to serve.
