- Remove the rabbit from marinade, pat dry, and cut into pieces. Season with salt and freshly ground pepper.
- Brown the rabbit pieces in hot oil until golden. Remove and set aside.
- Add bacon to the pan drippings and sauté until crispy.
- Add chopped onion, sliced carrot, minced garlic, and minced parsley. Sauté until vegetables are tender.
- Stir in flour, tomato paste, rosemary, and bay leaf. Return the rabbit to the pan.
- Pour in chicken stock and bring to a boil. Add white wine and reduce heat to simmer.
- Cook over low heat until the rabbit is tender and flavors meld, about 45-60 minutes.
