Ingredients

  • 1 rabbit, marinated
  • 6 pieces bacon, cut up
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 Tbsp. tomato paste
  • 1 carrot, sliced
  • 1 Tbsp. flour
  • 1 bunch parsley, minced
  • 1/2 c. white wine
  • 1/2 c. oil
  • 1 bay leaf
  • 1 sprig rosemary
  • salt and pepper
  • chicken stock

Instructions

  1. Remove the rabbit from marinade, pat dry, and cut into pieces. Season with salt and freshly ground pepper.
  2. Brown the rabbit pieces in hot oil until golden. Remove and set aside.
  3. Add bacon to the pan drippings and sauté until crispy.
  4. Add chopped onion, sliced carrot, minced garlic, and minced parsley. Sauté until vegetables are tender.
  5. Stir in flour, tomato paste, rosemary, and bay leaf. Return the rabbit to the pan.
  6. Pour in chicken stock and bring to a boil. Add white wine and reduce heat to simmer.
  7. Cook over low heat until the rabbit is tender and flavors meld, about 45-60 minutes.
