Ingredients

  • 2 Tbsp. vegetable oil
  • 1/2 lb. bottom round beef, cubed
  • flour
  • 1 large onion, diced
  • 1 large ripe papaya, peeled, seeded, and diced
  • 3 medium potatoes, peeled and cubed
  • salt and pepper, to taste
  • 1 bay leaf
  • 2 carrots, peeled and sliced
  • 2 Tbsp. poppy seed
  • 4 sprigs parsley, chopped
  • 3 c. water
  • 1 c. mashed pumpkin

Instructions

  1. Heat vegetable oil in a stew pot and toss beef cubes in flour, then brown in the oil.
  2. Remove the beef and add diced onions to the hot fat, sautéing until soft and golden.
  3. Add water, browned beef, diced papaya, potatoes, carrots, bay leaf, poppy seed, and chopped parsley to the pot.
  4. Stir in mashed pumpkin and mix thoroughly, then season with salt and pepper to taste.
  5. Allow the stew to simmer gently on the stovetop for 90 minutes, adding more liquid if it becomes too dry.
  6. Serve hot with a crisp green salad and baked bread.
