Donegal Potatoes

Hearty Donegal Potatoes feature seasoned ground beef, sautéed vegetables, and melted cheese over baked potatoes, offering comforting flavors perfect for a satisfying family dinner.

Ingredients

  • 1 medium yellow onion, chopped
  • 1/2 green pepper, chopped
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 Tbsp. olive oil
  • 1 lb. lean ground beef
  • 4 large baking potatoes
  • 4 slices white American cheese
  • 2 c. water
  • 2 to 3 tsp. Kitchen Bouquet
  • 2 packets beef bouillon
  • 1 Tbsp. cornstarch

Instructions

  1. In a large (10 to 12-inch) frypan, heat olive oil.
  2. In the heated oil, sauté chopped onion and green pepper until the onion is transparent, but not brown.
  3. Remove the sautéed onion and green pepper from the pan and keep warm.
  4. Add lean ground beef to the pan and cook until browned.
  5. Stir in drained sliced mushrooms.
  6. In a separate pot, bring 2 cups of water to a boil.
  7. Add beef bouillon packets and Kitchen Bouquet to the boiling water, then stir in cornstarch to thicken.
  8. Pour the gravy over the cooked beef and vegetables.
  9. Bake the baking potatoes until tender, then cut in half and scoop out some flesh.
  10. Fill the potato shells with the beef mixture, top with slices of white American cheese.
  11. Place the stuffed potatoes in the oven until the cheese melts.
  12. Serve hot, garnished if desired.
