Ingredients

  • 2 medium onions
  • 2 carrots
  • 1 Irish potato

  • 2 or 3 Anaheim chiles
  • 1 can (4 oz.) diced Ortega chilies
  • 1/4 c. Monterey Jack cheese
  • 1/4 c. Colby cheese
  • 1 c. milk

Instructions

  1. Dice onions, carrots, and potatoes.
  2. Chop garlic and sauté in butter for about 5 minutes.
  3. Add chicken broth to the pot.
  4. Add chopped and seeded tomatoes and Ortega chilies.
  5. Simmer until vegetables are tender.
  6. Add grated Monterey Jack and Colby cheeses and stir until melted.
  7. Pour in milk and heat until hot, but do not allow to boil.
  8. Serve the soup hot.
