Soubise is a creamy, onion-infused rice dish with herbs, perfect for comforting meals or as a side for special occasions, offering rich flavors and a velvety texture.

Ingredients

  • 1/2 cup rice
  • 2 quarts boiling water
  • 1 tablespoon salt
  • 6 tablespoons butter or margarine
  • 2 pounds onions chopped
  • 1/4 to 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 to 1/2 cup chopped parsley

Instructions

  1. Place salt in boiling water and bring to a boil.
  2. Add rice to the boiling water and cook for 5 minutes.
  3. Drain the rice and place it in an ovenproof casserole.
  4. Melt butter in a skillet and sauté onions until soft.
  5. Add the sautéed onions to the rice and stir well.
  6. Cover tightly and bake at 300°F (150°C) for 1 hour.
  7. Remove from the oven and stir in sour cream, chopped parsley, salt, and pepper to taste.
