Ingredients

  • 2 cups dry pancake mix
  • 2 (0.9 oz.) packages Good Seasons Italian salad dressing
  • 1 egg
  • 1/3 cup water
  • 2 1/2 to 3 pounds fryer chicken, cut up

Instructions

  1. Mix pancake mix and 1 package of Italian salad dressing (dry); set aside.
  2. Beat egg with water; stir in the second package of Italian salad dressing (dry).
  3. Coat each piece of cut-up chicken evenly with the egg-water-dressing mixture, then roll in the pancake-dressing mix. Let dry on toweling.
  4. Heat 1-inch deep oil in a heavy skillet to 400°F (medium-high heat).
  5. Fry the chicken 4 to 5 minutes on each side until golden brown.
  6. Place fried chicken on cookie sheets and bake in a 350°F oven for 30 minutes for a crispy coating.
