Ingredients

  • 3 Tbsp. butter or margarine
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped celery
  • 3 c. chicken broth
  • 1 can canned tomatoes
  • 1/4 c. uncooked rice
  • 1 Tbsp. chopped parsley
  • 1/2 bay leaf
  • 1 or more Tbsp. Old Bay seasoning
  • 1 (4 1/2 oz.) can shrimp
  • 1 (6 oz.) can crab meat

Instructions

  1. Melt butter in a large saucepan; add chopped onion, green pepper, and celery.
  2. Saute until lightly browned, about 10 minutes.
  3. Add chicken broth, canned tomatoes, uncooked rice, chopped parsley, bay leaf, and Old Bay seasoning.
  4. Bring to a boil. Cover and simmer for 30 minutes until rice is tender.
  5. Stir in the drained shrimp and crab meat before serving.
