Crab Rice Soup

Ingredients
- 3 Tbsp. butter or margarine ⓘ
- 1/2 c. chopped onion ⓘ
- 1/4 c. chopped green pepper
- 1/4 c. chopped celery ⓘ
- 3 c. chicken broth
- 1 can canned tomatoes ⓘ
- 1/4 c. uncooked rice ⓘ
- 1 Tbsp. chopped parsley ⓘ
- 1/2 bay leaf ⓘ
- 1 or more Tbsp. Old Bay seasoning ⓘ
- 1 (4 1/2 oz.) can shrimp ⓘ
- 1 (6 oz.) can crab meat ⓘ
Instructions
- Melt butter in a large saucepan; add chopped onion, green pepper, and celery.
- Saute until lightly browned, about 10 minutes.
- Add chicken broth, canned tomatoes, uncooked rice, chopped parsley, bay leaf, and Old Bay seasoning.
- Bring to a boil. Cover and simmer for 30 minutes until rice is tender.
- Stir in the drained shrimp and crab meat before serving.
