Ingredients

  • 1/2 cup shortening
  • 1/2 cup butter
  • 2 3/4 cups sugar
  • 6 large eggs
  • 1/4 teaspoon salt
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 3/4 cup crushed pineapple (not drained)

Instructions

  1. Cream together the shortening, butter, and sugar.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift together the dry ingredients (flour, baking powder, salt).
  4. Add the dry ingredients to the mixture one spoon at a time, alternating with the milk and vanilla.
  5. Stir in the crushed pineapple until well blended.
  6. Pour the batter into a greased large pan.
  7. Place the pan in a cold oven and set the temperature to 325°F.
  8. Bake for 1 1/2 hours or until the top springs back when lightly pressed.
  9. Let the cake stand a few minutes, then run a knife around the edge.
  10. Carefully remove the cake and place on a rack to cool.
  11. Combine 1/4 cup butter, 1 1/2 cups confectioners sugar, and 1 cup drained pineapple to make the glaze.
  12. Pour the glaze over the hot cake.
