Ingredients

  • 1 lb. red beans (dry)
  • 1 lb. sausage (or ham), cut up
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 to 4 cloves garlic, minced
  • salt to taste
  • pepper to taste
  • 2 Tbsp. flour
  • 1/4 to 1/2 cup cooking oil

Instructions

  1. Sort and wash the dry red beans.
  2. Add the cut sausage, chopped onion, chopped bell pepper, minced garlic, salt, and pepper to the pot with the beans.
  3. Make a roux in a separate pan by browning the flour in cooking oil.
  4. Pour the roux over the bean and sausage mixture to thicken the liquid.
  5. Cook until the beans are tender and the flavors meld.
