Spaghetti Carbonaro

A hearty Italian-inspired pasta dish featuring crispy bacon, spinach, raisins, and a creamy egg sauce, perfect for satisfying family dinners with rich flavors and comforting textures.

Ingredients

  • 3 eggs
  • 4 slices bacon
  • 1/2 cup chopped onions
  • 1/4 cup chopped green pepper
  • 2 tablespoons raisins or currants
  • 2 cans (15 oz.) Chef Boyardee spaghetti and meatballs
  • 2 packages (10 oz.) frozen leaf spinach, cooked and drained
  • 3 tablespoons Parmesan cheese

Instructions

  1. Hard-cook the eggs.
  2. Fry bacon in a skillet until crisp.
  3. Remove bacon and drain on absorbent paper.
  4. Take out all but one tablespoon of bacon fat; sauté onions and green peppers in the fat until golden.
  5. Add raisins and both cans of spaghetti and meatballs to the skillet.
  6. Cover and simmer for five minutes.
  7. Shell and dice the hard-cooked eggs.
  8. Toss spinach with Parmesan cheese and salt.
  9. Arrange the spaghetti mixture in the center of a platter.
  10. Arrange spinach around the outside of the platter.
  11. Garnish with chopped eggs.
