Supper Nachos offer a hearty, cheesy, and flavorful dish featuring seasoned ground beef, melted cheese, and fresh toppings, perfect for casual gatherings or family dinners.

Ingredients

  • 2 lb. ground round
  • 1 large onion, chopped
  • 40 oz. refried beans
  • 2 (7 oz.) cans chopped green chilies
  • 5 cups shredded Jack or Cheddar cheese
  • 2 cups taco sauce
  • 1/2 bunch chopped green onions
  • small can chopped ripe olives
  • 3 avocados, mashed
  • 2 cups sour cream
  • 8 cups nachos
  • salt
  • pepper
  • parsley

Instructions

  1. Brown the ground beef and chopped onion with salt and pepper; drain excess fat.
  2. Spread refried beans evenly in an 11 x 17-inch shallow pan.
  3. Layer the cooked meat over the beans, then top with chopped green chilies and shredded cheese.
  4. Drizzle taco sauce over the cheese layer.
  5. Bake at 350°F for 30 minutes.
  6. Remove from oven and cover with chopped green onions and chopped ripe olives.
  7. Bake for an additional 10 minutes.
  8. Mound mashed avocados in the center of the nachos; surround with sour cream and sprinkle with parsley.
  9. Quickly tuck nachos around the edges before serving.
