Ingredients

  • 32 oz. frozen hash brown potatoes
  • 1/2 cup margarine
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 cups shredded Cheddar cheese
  • 12 oz. can Spam, cubed
  • 10 3/4 oz. can cream of mushroom soup
  • 1 1/2 cups sour cream
  • 1/2 cup milk
  • 1/2 cup chopped onion
  • 1/4 cup diced green chilies

Instructions

  1. Heat oven to 350°F.
  2. In a large bowl, combine thawed hash brown potatoes, melted margarine, salt, pepper, and garlic powder.
  3. In another bowl, mix shredded Cheddar cheese, cubed Spam, cream of mushroom soup, sour cream, milk, chopped onion, and green chilies if using.
  4. Add the Spam mixture to the potato mixture and stir well.
  5. Pour the combined mixture into a 2-quart baking dish.
  6. Sprinkle crushed potato chips over the top.
  7. Bake for 45 to 60 minutes or until thoroughly heated and bubbly.
