Ingredients

  • 2 boxes frozen chopped spinach, drained
  • 4 eggs, beaten
  • 1 onion, chopped fine
  • 20 sheets filo dough
  • 1 lb. feta cheese, crumbled
  • 2 sticks sweet butter, melted
  • fresh dill
  • fresh parsley
  • 1 lb. cottage cheese

Instructions

  1. Brown the chopped onion in olive oil.
  2. In a bowl, combine the browned onion, drained spinach, beaten eggs, crumbled feta cheese, and cottage cheese.
  3. Mix well until all ingredients are evenly incorporated.
  4. Add salt, pepper (if desired), chopped fresh dill, and chopped fresh parsley to the mixture.
  5. Melt the butter.
  6. Brush a 9 x 13-inch pan with melted butter.
  7. Layer 10 sheets of filo dough in the pan, butter each sheet as you go.
  8. Spread the spinach mixture evenly over the layered filo.
  9. Cover with the remaining 10 sheets of filo, brushing each sheet with butter.
  10. Use a sharp knife or razor blade to cut through the top 10 sheets into pieces.
  11. Bake in a preheated oven at 350°F to 375°F for 40 to 50 minutes until golden brown.
