Ingredients

  • 1/2 c. diced onions
  • 2 Tbsp. shortening
  • 1 1/2 to 2 c. tomato juice
  • 1/2 c. water
  • 2 medium diced green peppers
  • 1 1/2 lb. ground beef
  • 1 c. cooked rice
  • salt and pepper to taste

Instructions

  1. Brown onions lightly in shortening.
  2. Add ground beef and break up particles so the meat mixture is very fine.
  3. When the beef is browned, drain excess fat and add diced green peppers, tomato juice, and water.
  4. Stir in the cooked rice and season with salt and pepper to taste.
  5. Bring the mixture to a boil.
  6. Reduce heat and let simmer for about 30 minutes or until the peppers are tender.
